U-Bet Cherry Vanilla Noodle Kugel

This Cherry Vanilla Noodle Kugel made with Fox's U-bet Vanilla Syrup is not your Bubbe's kugel...bet she's definitely going to ask for seconds. 

Fox’s U-Bet Cherry Vanilla Noodle Kugel

Serves: 8 to 10

INGREDIENTS:

  • Kosher salt
  • 1, 12-oz package dried egg noodles
  • 6 large eggs
  • ½ cup Fox’s U-Bet Vanilla Syrup
  • 2 cups cottage cheese
  • 1 cup plain Greek yogurt
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1cup dried cherries

TOPPING INGREDIENTS:

  • 3 cups cornflakes
  • 3 tablespoon unsalted butter, melted
  • 2 tablespoon Fox’s U-Bet Vanilla Syrup

PREPARATION:

  1. Preheat the oven to 325F.  Generously grease a 9x13-inch baking dish.
  2. Cook the noodles al dente according to package directions. Drain and rinse under cold water. Set aside.

  3. In a large mixing bowl, combine the eggs, Fox's U-bet Vanilla, cottage cheese, Greek yogurt, melted butter, vanilla extract, lemon zest, and cinnamon—whisking until combined.
  4. Add the cooked noodles and cherries, mixing until well combined. 
  5. In a medium bowl, combine the cornflakes, melted butter, and 2 tablespoons U-bet Vanilla Syrup.
  6. Transfer the noodles mixture into the prepared baking dish, spreading noodles in an even layer.
  7. Top with cornflake topping.
  8. Transfer to the oven and bake until fully set about 1 hour.
  9. Remove from the oven and let cool slightly before cutting into portions and serving.
