Molten Fox’s U-bet Chocolate Sundae Cakes
Makes: 6
INGREDIENTS:
- 7 tablespoons salted butter, divided
- 3 tablespoons cocoa powder, divided
- 1 cup (6oz) chopped bittersweet chocolate
- 1/4 cup U-Bet Chocolate Sundae Sauce
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 3 large eggs
- 3 large egg yolks
- 1 ¼ cups powdered sugar
- ½ cup all-purpose flour
- 1 teaspoon instant coffee powder
INSTRUCTIONS:
- Preheat the oven to 400˚F
- Generously grease the bottom and sides of six small (6oz) ramekins with 1 tablespoon softened butter. Sprinkle in 1 tablespoon of cocoa powder to coat evenly and tap out the excess.In a medium, microwave safe bowl, melt the butter and chocolate in 60-second increments in the microwave, using a spatula to stir between each increment. Once smooth, stir in the U-Bet Sundae Sauce. Set aside to cool slightly.
- In a separate bowl, use a hand or stand mixer to whisk the eggs and egg yolks until light and creamy, about 3 minutes. Add the powdered sugar and mix for an additional one minute.
- Add the cooled chocolate mixture, flour, coffee powder, and remaining 2 tablespoons cocoa powder to the eggs, and mix with a rubber spatula until just combined.
- Divide the batter between each greased ramekin. Place ramekins on a baking sheet, and bake for 13 to 15 minutes, until the sides are set.
- Let them cool for 5 minutes in the ramekin before running a knife around the edges to loosen and then inverting them onto a plate. Note: they will stick if your dishes aren’t greased enough!
